Over the last 80 years, the mineral content of fruits and vegetables has quietly collapsed. A peer-reviewed analysis of UK food data across three time points (1940, 1991, and 2019) found that iron dropped by 50%, copper by 49%, and sodium by 52%. In the US, a USDA study of 43 garden crops found declines of 6 to 38% in protein, calcium, phosphorus, iron, and key vitamins between 1950 and 1999. These are not isolated findings. Similar patterns have been documented in Australia, Finland, and across multiple countries.

An area of farmland nearly as large as Alaska, 135 million hectares worldwide are now nutrient-depleted. In 1970, plants got nearly half their nutrients directly from the soil. By the 2000s, that number had dropped to around 30% and is projected to fall to just 21%. The rest comes from synthetic fertilizers, which replace nitrogen and phosphorus but ignore the dozens of trace minerals your body needs. At the same time, crop varieties have been bred for size and yield, not nutrition, producing bigger plants that cannot absorb minerals fast enough to keep up with their own growth.
